Flounder & Sole

For the most part Flounder and Sole are the same thing. There are various forms of flatfish which fall under both names and some that fall under only one but they are all species of flatfish and the terms Flounder and/or Sole are more about what part of the country they will be sold into and what name that market uses to recognize the flatfish species. Atlantic Ocean Perch

Primarily caught off the coast of New England and Canada, Ocean Perch is a small cold water fish that is in a class of its own. It’s vibrant red skin color and distinctive flavor profile makes it very popular in the Midwest for fish fry’s and center of the plate menu options. This item is traditionally sold as a skin-on product. The Fillet size tops out around 6-8oz but averages about 2-4oz but primarily sizes by the Count not by the ounce. The whole fish only weighs about 4-6lbs and does not get much bigger.
